The deeper base section serves as the reservoir meant to be filled with hot water.
A shallower, removable serving pan or liner sits perfectly flush inside the rim directly above the water level.
The steam trapped beneath the liner keeps your food warm at the table without continuing to cook or scorch it.
 
In very good vintage condition, no noticable scratches on the silverplate. The warming pan shows wear on the interior and bottom but this does not show when used for serving. The underside of the warming pan has been "mended", see photo
